Hunter brought home a Star Wars cookbook from school and wanted me to try some of the recipes in there.  Everyone knows, including my boys that I just don’t cook. But some of these looked pretty easy and thought if it makes him happy I will try.  Tonights dinner was Dark Side Salsa, Galaxy Grilled Cheese and of course Yoda Soda.

Dark Side Salsa

6 ripe Roma tomatoes
1 small onion
1 small avocado
1 can (4 ounces) diced mild green chiles
1 lemon or lime
Blue corn tortilla chips
 
Just chop of everything and stir together.

Galaxy Grilled Cheese

4 slices whole-wheat bread
4 teaspoons butter
8 thin slices of Cheddar cheese
8 pickle slices
 
Basically make a grilled cheese sandwich and add pickles to it.  And to make it more fun to eat I used a star cookie cutter.

Yoda Soda

3 limes
3 tablespoons sugar
1 cup sparkling water
1 scoop lime sherbet
 
Cut up limes and squeeze out the juice until you have 1/4 cup lime juice.  Add the sugar and stir until sugar dissolves.  Add the sparkling water and stir until mixed.  Scoop up the sherbet into the glass and then pour in the lime water.
